Stéphane Carrade, heartfelt patron of Lin des Pyrénées
Stéphane Carrade, two-star chef at Skiff Club (Hôtel Ha(a)ïtza, Pyla-sur-Mer), becomes the heartfelt patron of Lin des Pyrénées with his dish "Lin entre Terre et Mer".

"There is no such thing as chance, only appointments..."
Just two years ago, Stéphane Carrade, two-Michelin-star chef at Skiff Club - Hôtel Ha(a)ïtza, Pyla-sur-Mer, was the first to believe in Lin des Pyrénées. To believe in our products, in our twice gold-medalled virgin linseed oil, in our vision, in our commitment and in the singularity of our project.
A human, profound encounter, woven from shared values
Between Stéphane Carrade and Christelle Bonnemason-Carrère, president of Lin des Pyrénées, there are obvious things in common: personal stories shaped by cosmopolitan influences - Réunion Island, the Arcachon Basin, Béarn - and beloved lands between land, sea and mountains.
A love of raw produce. The quest for excellence. Respect for living things. A shared passion for art, creation and creativity in all simplicity.
"Le Lin entre Terre et Mer" - a signature dish
From this close bond came a signature dish, created and served at Skiff Club: "Le Lin entre Terre et Mer" (Flax between Land and Sea). A creation inspired by both Stéphane’s story and Christelle’s. A dish that reflects their bond, telling the story of a territory, an emotion, a journey travelled.
Rooted, living and innovative cuisine. A noble, local and virtuous raw material. Human and gastronomic bonds woven with passion.
From the Béarn terroir to the shores of the Arcachon Basin, the chef pays tribute to the naturalness of oilseed flax, this nutritional treasure grown at the foot of the Pyrenees. Between authenticity, boldness and emotion, this encounter perfectly illustrates what Lin des Pyrénées stands for.
Our heartfelt patron
For Christelle, Lin des Pyrénées is much more than a business project. It is a career change, a commitment, a return to her roots - a fierce desire to defend respectful farming and to give meaning back to what we put on our plates. Stéphane Carrade understood this desire straight away. He welcomed it, carried it and encouraged it.
Today, he is not simply an ambassador. He is our heartfelt patron, and we could not imagine a better travelling companion.
Thank you, Chef, for your trust, your talent and your humanity.
