Gourmet flax biscuits, made in the Pyrenees

It all starts with the terroir. The flax that flavours our biscuits is grown and processed in the heart of Béarn, as close as possible to the fields. This closeness is the guarantee of a fresh and traceable raw material, from the grain to the batch. Our eight recipes offer flax in all its gourmet forms: crunchy biscuits to break among friends, soft cookies studded with kibbled seeds, buttery melting shortbreads. A biscuit-making rooted in its territory, where you find the signature of the Pyrenees in every bite.

This standard has been recognised: Lin des Pyrénées won the Médaille d'Or Best Of Gastronomie 2026, an award that salutes the quality of our whole range. Our biscuits also benefit from the drive of our ambassador chefs, who imagine with us new ways of cooking flax and feed our collection of recipes.

Flax, a gourmet ingredient

If flax appeals so much to pastry cooks, it is first for what it brings to the palate. Kibbled flaxseed gives our biscuits real density and a frank crunch, with that hazelnut note that is the signature of the house:

• a frank hazelnut taste, which goes with butter as well as with chocolate;
• a crunchy texture brought by the kibbled seeds;
• a flaxseed rich in omega-3 ALA, a source of fibre and providing around 20% protein.

An organic certification that crowns our standards

Our supply chain is now certified organic: the oilseed flax that goes into our recipes is grown according to the specifications of organic farming, without synthetic fertilisers or pesticides. This recent certification crowns a standard we have held from the start, that of a raw material grown on a specific terroir and harvested when ripe, then processed in a short supply chain in the heart of the Pyrenees.

When to enjoy our flax biscuits?

Our biscuits have their place at any time of day: at breakfast with a coffee, at snack time for young and old, or with drinks for the most savoury and crunchy versions. They go wonderfully with a slice of bread drizzled with linseed oil or a local cheese, and happily slip into a basket when entertaining.
